Weld commissioners renew Fort Lupton-area restaurant's liquor license despite open permit
The condition requires the chief building official to review the unresolved fire-pit permit on Feb. 1, 2027, and report whether more action is needed; the matter can return to the board if it remains open.
Weld County commissioners on Nov. 2 renewed the county liquor license of Salt and Acres, a Fort Lupton-area restaurant, on the condition that a county official recheck an unresolved fire-pit building permit on Feb. 1, 2027.
The board renewed the Vintner's Restaurant County Liquor License on the condition that Caleb Solson review the building-permit issue on Feb. 1, 2027, and report whether further action was needed. The board said it would revisit the matter if the issue had not been resolved. Counsel had recommended renewing the license and checking the permit status again in three months.
A building permit for fire pits at the establishment had not been closed, Chloe White of the clerk to the board's office told commissioners. Solson, the chief building official, said a permit issued in 2023 covered gas lines and five fire pits on the patio, and the underground gas lines had been inspected. He said aerial images appeared to show the project was complete, but the inspections and permit were not. Solson said the permit had expired in '24 or the first part of '25 and a new permit would be needed to complete the inspections.
Justin Crusoe, representing Salt and Acres, said the business had had issues with the project contractor and had reapplied after the matter was brought to its attention. Crusoe said the business intended to resolve the issue correctly with proper contractors and work, and that it would "make sure this gets resolved as soon as possible."
Commissioner Jason Maxey asked whether the board needed to hold a hearing or could simply confirm that the permit issue had been resolved. Counsel said a hearing would not need to go forward if the building official confirmed the issue had already been resolved. Counsel also said liquor-license renewals are not public hearings.
White said Salt and Acres has held a liquor license since March 2017. She said the business had met all requirements for both a regular renewal and the biennial renewal.
A speaker said a 90-day follow-up would fall just before Feb. 1, which was not an agenda day, and identified Feb. 1 as a viable date. A commissioner said renewing the license and revisiting the building-permit issue in three months was the option he favored.
