Slyce Pizza Co. Upgrades Kitchen Equipment in Old Town Fort Collins

Slyce Pizza Co. is upgrading its kitchen at 163 W Mountain Ave in Fort Collins with a new self-contained pizza oven, according to a commercial building permit filed with the city.

Sailer Construction of Fort Collins will remove the existing Type 1 commercial hood system and extend ductwork to accommodate the new equipment. John Sailer serves as both the general contractor and primary licensed professional on the project.

The work represents an equipment upgrade rather than expansion of the restaurant space. Existing electrical systems are sufficient for the installation, according to permit documents.

Locally Owned Pizza Restaurant

Slyce Pizza Co. opened at the location in August 2014, specializing in creative pizza by the slice alongside whole pies. The restaurant serves 15 to 30 different varieties daily, with selections expanding to 50 types during busy periods, according to the business's website.

Menu offerings feature unique toppings including mac and cheese or Philly cheesesteak alongside traditional pizza options. The business operates as a single-location, locally owned establishment focused on quality ingredients and community connection.

The restaurant occupies a building constructed in 1873 and historically known as the McCormick Express Building. The structure represents one of several preserved commercial buildings along West Mountain Avenue in the Old Town West district.

Old Town Commercial District

The address sits within Fort Collins' walkable downtown core, surrounded by independent restaurants, boutique shops, galleries and service businesses. Old Town Fort Collins maintains a concentration of preserved 19th and early 20th century architecture alongside contemporary commercial uses.

The neighborhood functions as the city's primary downtown destination district, characterized by pedestrianized streets and a mix of dining and retail establishments serving both local residents and visitors.
