Edison's Ice Cream Opens Winter Bookings for Holiday Events Across Northern Colorado

Edison's Ice Cream has opened its calendar for winter event bookings, offering mobile cart service for holiday parties and corporate gatherings throughout Northern Colorado.

The Fort Collins-based business requires a minimum of 100 guests for private events and serves customers across Larimer and Weld Counties. The mobile cart service provides two booking options that allow hosts to customize ice cream selections for their gatherings.

Event organizers can reserve the cart for private parties, corporate functions, weddings and catering events. Edison's Ice Cream produces all flavors as gluten-free, with dairy-free options available for guests with dietary restrictions.

The company launched in spring 2025 with its flagship location inside the historic Northern Hotel at 172 N. College Ave. in Old Town Fort Collins. The shop produces hundreds of house-made gluten-free waffle cones weekly using oat flour and cinnamon.

Mobile food vendors operating in Colorado must hold retail food mobile licenses from the Colorado Department of Public Health and Environment and comply with local county health department regulations in Larimer and Weld Counties. These licenses require adherence to sanitation, food safety and equipment standards.

Most mobile food vendors in the region recommend booking one to two months in advance due to high demand during peak seasons. While mobile food operations in Northern Colorado typically operate from late April through early October due to weather conditions, Edison's winter availability extends service options for year-end celebrations.

Edison's currently seeks two full-time bakers for its Fort Collins production facility.
