Modern Market Introduces Fall Menu at Foothills Shopping Center
Modern Market Eatery at Foothills Shopping Center in Fort Collins has launched its fall menu, featuring four new items including protein bowls, a sandwich, and seasonal beverages.
The restaurant, which opened at Fort Collins' largest retail destination, now offers the Aleppo Steak Bowl with garlic herb steak, rice and quinoa on mixed greens with turmeric cauliflower, cherry tomatoes, pickled onions, cotija cheese, Aleppo pepper and scallion ranch. The menu also includes an Aleppo Chicken Stack Sandwich served on ciabatta with blackened chicken thigh, fresh mozzarella, roasted cherry tomato, basil pesto, Aleppo pepper and lemon za'atar aioli.
For plant-based options, the fall lineup features Chipotle Hummus & Veggies with spicy charred broccoli, carrots, cucumbers, cauliflower and tomatoes served with blue corn tortilla chips. A Cranberry Cinnamon Lemonade made with fresh cranberry juice, cinnamon syrup, lemon juice, water and cane sugar completes the seasonal offerings.
Modern Market originally launched as Modmarket in Boulder in 2009 before rebranding and expanding to more than two dozen locations across Colorado, Texas, Arizona, Washington D.C., and Maryland, according to the company. The fast-casual concept emphasizes scratch cooking with whole ingredients, avoiding artificial flavors, colors, trans fats and hydrogenated oils.
The restaurant uses organic and local ingredients when possible and sources proteins described as naturally raised without hormones or antibiotics, according to Modern Market. All dressings, sauces, pizza crusts and roasted proteins are prepared from scratch in-house.
The fall menu incorporates Aleppo pepper, a moderately spicy chili flake from the Mediterranean and Middle Eastern cuisines known for its deep red color and slightly sweet flavor profile. The ingredient reflects the restaurant's approach to globally influenced menu items using distinctive flavors.
