BIG CITY ROADHOUSE, 1923 59th Ave, Greeley, Sept. 24 — Two servers handled dirty dishes and customer tables, then put on gloves and prepared salads without washing their hands; they washed their hands when corrected. Coleslaw, shredded lettuce, cream-based dressings, sliced tomatoes, queso, sliced and shredded cheeses, fish, hard-boiled eggs and salsa were held at 44-52°F in prep coolers at 46-48°F and discarded after being improperly cold-held for more than four hours; cooked noodles, sliced tomatoes and refrigerated pepperoni portions held more than a day had no date marks; the specials menu omitted asterisks for burgers cooked to order and marked fully cooked tilapia; knives and scraping utensils were stored in make-table crevices, then cleaned and moved to a clean, dry surface.
